Chef Ulysses with SIA provisions is cooking us up a family style meal that we have paired with our estate wines. Our friends Andy & Graham Ferrel will be our festive music for the evening. Cocktail hour & hors d'oeuvres
Pumpkin Toast- Local pumpkin hummus, apple canopy. roasted pumpkin seed granola on pumpernickel.
Shrimp Cocktail- Poached Key West shrimp and benedictine sauce.
Chicken & Beignet- Crispy chicken nuggets, marshmallow fluff, hot honey, with beignet.
DINNER
Homestead Calabaza Salad- Charred local fall squashes, hot honey, roasted and raw radishes, roasted chestnuts, kale blend, and a warm buttermilk dressing.
Charred Brussels sprouts- Roasted sprouts, spiced nuts, and canela blueberry sauce.
Classic Mash- Yukon gold mash potato with a brown butter gravy.
Baked Mac & Cheese- Macaroni with a cheddar and gruyere bechamel.
Braided Stuffing- Brioche challah bread, roasted carrots, onions, celery and leeks, chestnuts, and Turkey jus.
Peppercorn Brisket- Dry-aged whole brisket, peppercorn & winter herb crust with grainy mustard au jus.
Turkey Roulade- Free-range young turkey, sous vide with sage and olive oil for 24 hours. Cranberry and blood orange sauce with classic turkey gravy (made from neck bones and smoked leg meat).
DESSERT
Petit Bartlett Pear Galette- Shaved pears with turbonado sugar & cardamom spice mix and a pear brandy glaze.
Black Walnut Tartlets- Candied Curtis Creek black walnuts with a fig & molasses jam on sweet tart shells.
Silky Pumpkin Mousse- Merengue crumble blue hubbard pumpkin mousse with sweet cream, all spice, nutmeg, and meregue.
